Marmite™ avocado open sandwich

Ingredients

  • ½ cup fresh parsley, chopped
  • 2 tbs capers (optional)
  • 1 clove garlic, peeled and crushed
  • 1 tbs lemon juice
  • ½ tsp mustard
  • 50ml extra virgin olive oil
  • 4 slices wholegrain bread
  • 2 large avocados, peeled, stone removed
  • 1 lemon, juiced
  • 2 tbs Marmite™

Method

  1. Combine the parsley, capers, garlic, lemon juice and mustard in a food processor and process until finely chopped, but not smooth. Put in a serving bowl and set aside.
  2. Toast each slice of bread under grill or in toaster. Spread each slice with Marmite™.
  3. Cut avocado into slices and sprinkle with lemon juice. Arrange avocado slices over the Marmite™ toast. Spoon over herb and mustard sauce and serve immediately.

Our Tips

  • The herb sauce can be stored for up to a week in the fridge. Before serving, remove from fridge and bring to room temperature, then stir well.
