Ingredients
- 4 cobs of corn, husks removed
- 2 cloves garlic, minced
- 2 lemons or limes
- 2 tbs Marmite
- 2 tbs sunflower oil
- 1 tsp smoked paprika
- 40g parmesan cheese, grated
- 300g low fat plain yoghurt
Method
- Preheat your BBQ.
- Peel back the husks of the corn and tie with string. Alternatively remove the husks altogether.
- In a bowl, whisk together garlic, the juice of 1 lemon or lime, Marmite, sunflower oil and smoked paprika.
- Brush the corn cobs with two-thirds of the glaze and grill for a further 15 – 20 minutes turning regularly until lightly charred. Transfer to a serving platter and brush over the remaining glaze and top with grated parmesan cheese.
- Serve with plain yoghurt and lemon or lime wedges.
