Ingredients

  • 4 cobs of corn, husks removed
  • 2 cloves garlic, minced
  • 2 lemons or limes
  • 2 tbs Marmite
  • 2 tbs sunflower oil
  • 1 tsp smoked paprika
  • 40g parmesan cheese, grated
  • 300g low fat plain yoghurt

Method

  1. Preheat your BBQ.
  2. Peel back the husks of the corn and tie with string. Alternatively remove the husks altogether.
  3. In a bowl, whisk together garlic, the juice of 1 lemon or lime, Marmite, sunflower oil and smoked paprika.
  4. Brush the corn cobs with two-thirds of the glaze and grill for a further 15 – 20 minutes turning regularly until lightly charred. Transfer to a serving platter and brush over the remaining glaze and top with grated parmesan cheese.
  5. Serve with plain yoghurt and lemon or lime wedges.
