Ingredients
- 3 tbs sesame oil
- 1 tbs salt reduced soy sauce
- 1 tsp Marmite
- 1 tsp white vinegar
- 2 cloves garlic, crushed
- ½ tsp honey
- freshly ground black pepper
- 400g firm tofu, cut into cubes
To serve
- 2 cups steamed brown rice
- 4 cups steamed vegetables
- ½ cup fresh coriander, roughly chopped
- 2 spring onion, thinly sliced
Method
Mix sesame oil, soy sauce, Marmite, white vinegar, garlic and honey in a shallow bowl. Season to taste with black pepper.
Pat tofu dry with paper towels. Toss through the Marmite mixture.
Heat a frypan over medium heat.
Thread the tofu onto skewers and cook until browned on each side, basting with the leftover Marmite mixture.
Serve skewers over brown rice with steamed vegetables.
Garnish with coriander and spring onions to serve.
