Base Components

  • 4 slices, wholegrain sourdough
  • ¾ cup lite cream cheese
  • 2-3 medium tomatoes, sliced crossways
  • 1-2 medium peaches, sliced into thin wedges
  • Cracked black pepper

Marmite Lemon Drizzle

  • 1.5 tsp Marmite
  • 1 tbsp olive oil
  • 1 tsp warm water
  • ½ tsp lemon juice (optional for brightness)

Optional Garnishes

  • A sprinkle of dukkah
  • Mircogreens or herbs like basil
  • Toasted pine nuts or pistachios
  • A pinch of chilli flakes
  • Lemon zest over the top

Method

  1. Make the Marmite Drizzle
    In a small bowl, whisk together Marmite, olive oil, warm water, and lemon juice until smooth and glossy.It should be pourable, adjust with a tiny splash of water if needed.
  2. Prep the Tomatoes
    Gently season the heirloom tomato slices with a drop of olive oil and black pepper. Let them sit for 2–3 minutes to release some juices.
  3. Toast the Sourdough
    Toast in pan or toaster, until the edges are crisp and golden.
  4. Assemble
    Spread each warm toast with a generous layer of lite cream cheese. Layer the tomatoes and peaches on top.Spoon the Marmite drizzle over everything.
  5. Finish & Serve
    Top with mircogreens/herbs and any optional extras like dukkah or lemon zest. Serve immediately.
